You want the people that are manning your table to have a plan of action. Tell them ahead of time what the goal is. You could be after contact information, or be more interested in just getting a few points out to everyone that stops by. If they know what to do then it lessens nervousness. When your employees greet people with a friendly relaxed attitude it makes it more welcoming.
The promotional merchandise that you have at your table will attract people or not. If you have a high end item and your collected info from someone could bring in big bucks then you should have some decent items to offer. An umbrella can be a big draw. If you have a few open at your area they behave like road signs to people walking by. You could also trade out for possible customer information with a flashlight. Everyone need a flashlight at some point. I keep mine in my car at all times for nighttime emergencies.
A lot of people actually go to these things to collect information on products for their business. So, you need to make sure you have printed info for people to take home. There are lots of ways to do this. You can put things in a folder or hook papers together. One spot I stopped at had a chocolate bar with their info printed on the wrapper. I loved that booth and went by 3 times.
